apricot chicken

..so a few weeks ago i made one of the easiest/ fastest dishes i have ever made. Apricot Chicken, in the microwave. okay i know you're probably thinking, eww gross. but just trust me on this one, it really is good and it only takes about 15 minutes to make. i served it with rice and edamame on the side. i don't know if you've had or even heard of edamame before. they are actually soy beans and they are delicious! you can find them at Sam's in the freezer section. i would highly recommend trying them! my family loves them and whenever we make them they get devoured.

Apricot Chicken
Ingredients: 
1/2 c. apricot preserves
2 Tbsp. soy sauce
1 Tbsp. vegetable oil
1 Tbsp. cornstarch
1 clove garlic, minced
1/4 tsp. ground ginger
1 lb. boneless, skinless chicken breasts, cut into strips
1 medium green or yellow bell pepper, chopped
Hot cooked rice
Directions: 
  Combine the first 6 ingredients in a large bowl. Add the chicken and toss to coat. Transfer to a shallow microwave-safe dish. Cover and microwave on HIGH for 3 minutes, stirring once. Add bell pepper if desired. Cover and microwave on HIGH for 2 to 4 minutes or until chicken juices run clear, stirring once. Let stand for 3 minutes. Serve over rice. Yield: 4 servings.
