Spinach Lasagna Rolls

 i have a confession.. most of the time i don't plan my meals ahead. i get home from work on tuesdays at 2:30 and usually have no idea what to make. so starts the process of me pouring through my mom's cookbooks and searching the fridge for an inspiration. constantly i'm always saying, " mom, what should i make tonight?" she always replies, " that's the hardest part of cooking." which i have found to be so true! i have been trying be better about planning ahead, and making sure i know what i'm making the night before and writing up my grocery list so i can stop by our local iga on my way home from work. but the other tuesday night...i had no idea what to make, so i turned to pinterest where i found a supper easy recipe that we already had most of the ingredients for. Spinach Lasagna Rolls.

For this recipe you'll need:
9 lasagna noodles, cooked
10 oz. frozen chopped spinach, thawed ( i just used fresh spinach )
15 oz. ricotta cheese
1/2 c. grated Parmesan cheese
1 egg
salt and fresh pepper
32 oz. tomato sauce
9 Tbsp. mozzarella shredded cheese

Preheat oven to 350.

 Combine spinach, ricotta, Parmesan, egg, salt and pepper in a bowl.
 lay a piece of wax paper on the counter and lay out lasagna noodles. make sure noodles are dry.
 ladle about 1 cup of sauce on the bottom of a 8 x 8 baking dish.
 place 1/3 of ricotta mixture on end of noddle and then roll it up.

 place seam side down in pan with sauce
 ladle sauce over the noodles.
sprinkle each roll with mozzarella cheese.
 bake for about 30 minutes.
